Beslenmede Yenilebilir Filizlerin Yükselen Rolü: Sağlık Faydaları, Biyoaktif Bileşenler, Sürdürülebilirlik ve Yeni Araştırma Alanları

Özet

Yenilebilir filizler, glukozinolatlar, fenolikler ve izoflavonlar gibi fitokimyasallar açısından oldukça zengin bitkisel gıdalardır. Fonksiyonel gıdaların temelini oluşturan bu bileşiklerin bağışıklık sisteminin güçlendirilmesinden hücre yenilenmesine kadar birçok faydası bulunmaktadır. Aynı zamanda yapılan çalışmalar, yenilebilir filizlerin yüksek konsantrasyonlarda vitamin ve mineral içerdiğini göstermektedir. Yüksek besin değerine ek olarak, filizlendirme işlemi tanenler ve oksalatlar gibi antinütrientlerin azalmasını sağlayarak minerallerin biyoyararlanımını artırmaktadır. Filizlerin türü, filizlendirme koşulları gibi çeşitli faktörlerde besinsel bileşimi etkilemektedir. Son yıllarda, bu gıdalar birçok sağlık yararıyla ilişkilendirildikleri için oldukça talep görmektedir. Ancak, bu etkilerin standardize edilmesi ve klinik çalışmalarla desteklenmesi gerekmektedir. Bunlarla birlikte, filizlendirme kolay ve hızlı bir işlemdir ve belirli iklim koşuluna bağlı değildir (potansiyel olarak büyüme için daha sürdürülebilir). Ayrıca filizlerin gıda ürünlerinin işlenmesinde kullanılması, dünya çapında yaygın olarak tüketilen belirli ürünlerin besin değerini artırmak için iyi bir strateji olabilir. Bu derleme, yenilebilir filizlerin tüketilmesinin sağlık ve beslenme üzerindeki etkilerini, gıda bilimi perspektifiyle ele almayı amaçlamaktadır. Literatürde yer alan in vitro, in vivo ve insan çalışmaları taranarak; filizlenme sürecinin biyoaktif bileşenler, antinütrientler, vitamin-mineral profili ve biyoyararlanım üzerindeki etkileri incelenmiştir.
